KAITXO (Spain)

Kaitxo is an artisan bean-to-bar chocolate maker and specialty coffee roaster based in Balmaseda, Bizkaia, in the Basque Country of Spain. Founded in 2017 by Raquel and Jon Mikel González, Kaitxo grew from their shared passion for exceptional coffee and chocolate and has become one of the pioneering bean-to-bar producers in the Basque Country.

Kaitxo carefully selects cacao at origin, working with responsible producers and cooperatives, and then carries out the complete chocolate-making process in its Balmaseda workshop — from roasting and hand selection of the beans to grinding, refining, conching, tempering and moulding. Their approach is focused on bringing out the distinctive character of each cacao while maintaining traceability and respecting the work of the farmers.
